My favorite cupcake is the red velvet. Yesterday, I finally gained the courage to make one. The recipe, which I got from Joy of Baking was a little complicated than what I'm used to.
The cupcake part was easy. The cream cheese frosting, however, was a little runny than what I've intended and I had trouble piping it. Although the frosting swirls may not look very attractive, they still work and the cupcakes taste wonderful.
When I finally finished, the kitchen was a shipwreck. There were frostings everywhere!
Would I do it again? Hell yes!
